When boneless skinless chicken breasts go on sale for 1.69 a pound, the question is not, “What are we having for dinner?” but instead, “How will the chicken be cooked tonight?”
This is not a recipe blog, but I feel like I’d be remiss if I didn’t share the best chicken dish I ever ate–prepared for me by my husband! Now, I know the ingredients used in this menu might not compare with the thrift of a chicken dumpling meal, but I guarantee that nobody will leave the table disappointed. Serve the Lord and your husbands with gladness. And if he insists on showing off his new chef hat, stroke his boasting with gladness as well. Happy wives make for happy husbands, you know. ;)
Chicken Bryan like Carrabba’s®
Adapted from this site.Serves: 6
Prep. Time: 0:551 Tbls. minced garlic
1 Tbls. minced yellow onion
2 Tbls. butter
1/2 cup dry white wine
1/4 cup fresh lemon juice
2/3 cup cold butter - sliced
1 1/2 cup chopped sun-dried tomatoes (no substitutes)
1/4 cup chopped fresh basil
1/2 tsp. kosher salt
1/2 tsp. white pepper
6 boned, skinned chicken breast halves
extra virgin olive oil - for brushing
1/2 tsp. salt
1/2 tsp. black pepper
8 oz. goat cheese - room temperature (not feta)-Sauté garlic and onion in 2 Tbls. butter in a large skillet over medium heat until tender.
-Stir wine and lemon juice into skillet, increase heat to medium high, and simmer to reduce by half.
-Reduce heat to low and stir in cold butter, one slice at a time.
-Stir in tomatoes, basil, kosher salt, and white pepper; remove from heat; set aside.
-Brush chicken breasts with olive oil and sprinkle with salt and black pepper.
-Grill chicken over hot coals 15 - 20 minutes, or until cooked through.
-A couple of minutes before chicken is done, place equal amounts of cheese on each breast.
-Spoon prepared sun-dried tomato sauce over chicken.

We LOVE Carrabba’s, Amy! Thank you for this recipe. Have you tried the garlic mashed potatoes? How about the spicy calamari? Can you tell we’re hooked? I always order the Pollo Rosa Maria! I’ll send you a Christmas card and an invitation to my children’s birthday bash

my - You crack me up! This is my hubby’s all time favorite chicken dish. We were just contemplating begging his sister to keep the kids for an hour or two this weekend so we can have a “date” and Carraba’s is definitley where we’ll head:)

Yes, Mr. Beckman, the Baptists do have one up on us Presbyterians: the pot-luck dinners. Prezzies, of course, have pot-providence dinners, and well, it’s just not as tasty.

It’s hard to find goat cheese in Arkansas. We usually bbq the goat long before they turn to cheese.

Ooooh, yummy to my tummy! I need another good recipe, too! My favorite and overkilled, but not overcooked :), recipe is Aussie Chicken which I believe is from the Outback restaurant. My family loves this one. I found it on allrecipes.com if ya wanna try it, but only if you don’t care about how much fat and cholesterol you consume - not an healthnut lover’s dish, for sure!

We don’t exactly live in the sticks, but I’ve never heard of Carrabba’s…just must not be a chain in Virginia.
But their recipe does sound good–except for the goat cheese and wine. Maybe I’ll try the recipe and substitute for those two ingredients.

Molly, Molly, Molly. This is a chicken dish. Chicken. Chicken is meat. There is absolutely no tofu involved in this one.

Ack, Deb! The goat cheese and DRY white wine are non-substitutable. It’s what makes it different from say, plain ole’ chicken.
Trust me, I don’t like the sound of eating Billy Goat Gruff either, but there isn’t a cheese that comes close to it–unless anyone has ideas?
Also, we doubled the sauce part. For the folks at Buried Treasure and lucidmoments.blogspot.com, this would probably require quadrupaling, but it’s not like I need to tell them that.

Tim and Not Crunchy, goat cheese is tricky to find. You’d find it in the gourmet cheese refridgerators, or on a nice little farm not in Arkansas.
Janet, We’ve only been a couple times (4-5?) and don’t order anything but the Chicken Bryan, soooo….My husband gets the garlic mashed potatoes, but I get the vegetable of the day on the side. Looking forward to that invitation and finally meeting you…

Costco and Giant Eagle carry goat cheese.

They just put in a Carraba’s by us. I haven’t been there yet. This recipe sounds tasty.
I have to say I’m amazed at the sale price of the chicken. Here in the Detroit area a sale is $1.99. I don’t think I’ve ever seen it lower unless you bone and skin it yourself then you can buy it for .99

Caprino cheese is a substitute, but someone said that it isn’t as soft as the goat cheese. Feta and regular goat cheese don’t taste the same, and they aren’t the same consistancy. I guess you could use it (I really enjoy feta, tomato, and cucumber salad), but it’d just be a variation of the dish, not really a substitute, KWIM? Happy cooking!

Will the goat cheese work on Chicken McNuggets—do you get the same basic dish?
I think you should poll your readers to see if feta verses goat cheese is preferred. This could change lives!

What a frenzy over a chicken recipe!! Must be delightful!! It’s a pure joy to read of families enjoying good food. I’ll pass the recipe to my daughter-in-law who loves to cook from ’scratch’. I’m from Oklahoma and she lives in North Dakota.

I think I’d have to do feta cheese. I’m not a real goat cheese fan…too tangy. Come visit your sis-in-law’s new house on June 11th, Amy, and you can join her in coming to Jase’s birthday party!!! Greg and the kiddos are welcome too of course!!
